Autolyse

autolyse

Autolyse is a preliminary step in which flour and water are mixed and rested for a while before yeast and salt are added. During this rest, the flour absorbs water and gluten develops on its own, making the dough more extensible. This shortens kneading time and makes the dough easier to work.

“For autolyse, mix the flour and water and let it rest for about half an hour.”
