Béarnaise

béarnaise

Béarnaise is a hollandaise sauce variation flavored with shallots, tarragon, chervil, and a vinegar reduction. It is named after the Béarn region of France and is served especially with grilled red meat. Because it is an emulsion of egg yolks and butter, temperature control is needed.

Where It’s Used

“Serve béarnaise sauce in a separate dish alongside slices of grilled steak.”
