Beurre manié is a thickener made by kneading equal amounts of softened butter and flour into a paste. It is added in small pieces to a hot sauce while it is cooking to thicken it. Unlike a roux, the flour is not cooked beforehand.
Where It’s Used
“Add the beurre manié in small pieces to the hot sauce as it cooks, whisking to thicken it.”
