Citric Acid (Sour Salt)

citric acid

Citric acid crystals are the powdered, crystalline form of citric acid and add tartness to food in place of lemon juice. They are used as a preservative and acidulant in pickles, syrups, and preserves. Because a small amount adds strong tartness, measure carefully.

Where It’s Used

“Add a pinch of citric acid to the syrup to keep it from crystallizing.”
