Covered-pot steaming is a method of cooking food in its own steam in a covered pot with a small amount of liquid. The lid traps moisture so the food cooks without drying out. Steaming vegetables and fish this way is common in Turkish cuisine.
Where It’s Used
“Add the vegetables and a little water to a pot, cover it, and steam over low heat.”
