Desem

lievito madre

Desem is the Turkish name for a sourdough starter; it is a natural yeast culture kept alive by feeding it flour and water. A portion is set aside from the dough and stored to be added to the next batch of bread. In Italian, its firm-consistency form is known as lievito madre.

Where It’s Used

“Feed the desem regularly and use it as leaven in your next bread dough.”
