Frangipane is a baked filling made by combining almond cream with pastry cream. It is used to fill galette des rois and almond tarts. The name is said to come from the Italian Frangipani family of the sixteenth century.

Where It’s Used

“Spread the frangipane filling in the tart shell and bake until golden.”
