Katsuramuki is the technique of peeling a cylindrical vegetable such as a radish or cucumber by rotating it while cutting with a knife, producing one continuous, thin strip. The resulting sheet can then be cut into thread-like strips for garnish. It is considered one of the fundamental techniques for demonstrating knife skills in traditional Japanese cuisine.
