An oyster is a rough-shelled bivalve mollusk with a salty, mineral flavor. It is usually eaten raw with lemon. Freshness and cold temperatures are critical when serving, but even fresh, cold oysters can carry harmful bacteria, and lemon does not kill them. Pregnant women, young children, older adults, and people with weakened immune systems should not eat raw oysters.
Where It’s Used
“Open the oyster shell, squeeze lemon over it, and serve it raw.”
