Preserved Kavurma

Preserved kavurma is made by frying cubed meat in its own fat, then covering it with fat for storage. The layer of fat protects the meat from contact with air, but it does not make kavurma safe to store at room temperature; keep it in the refrigerator or freezer. It is a traditional method for storing meat from a sacrificial animal for the winter.
