Shrimp Deveining

Deveining is the process of opening and pulling out the dark digestive tract visible along a shrimp’s back, using a thin knife or toothpick. It gives the shrimp a cleaner appearance and removes the gritty texture that may be noticeable when eating it. The tract is usually removed after the shell is peeled and before cooking.
