Shrimp Vein

shrimp vein

The shrimp vein is the dark intestinal strand that runs along a shrimp’s back. Because it contains sand and grit, it is usually removed before cooking. This process is called deveining.

Where It’s Used

“Score the shrimp’s back and carefully remove the vein with the tip of a knife.”
