Sponge cake (pandispanya) is a spongy cake base made by whipping eggs and sugar until foamy and gently folding in flour. It rises from the air trapped in the eggs rather than a leavening agent, and forms the basic base of layered cream cakes. Its name comes from the Italian pan di Spagna, meaning 'Spanish bread.'
