Tulum cheese is a sharp cheese made by pressing cheese curds into a casing traditionally made from goat or sheep skin and ripening them inside it. The curds are crumbled and salted before aging in the tulum without exposure to air. Erzincan and İzmir tulum cheeses are the best-known varieties.
