Unleavened dough is made without yeast, using only flour, water, and salt. Because it does not rise, it is usually rolled thin and used for flatbreads and yufka (thin Turkish pastry sheets). Yufka, lavash, and mantı (Turkish dumpling) dough are examples.
Where It’s Used
“Roll the unleavened dough thin and cook it directly on a hot griddle.”
