Xanthan Gum

xanthan gum

Xanthan gum is a powdered thickener produced by fermenting sugars; even a very small amount has a strong thickening effect. It provides binding in gluten-free doughs and prevents sauces from separating. Too much can create a sticky texture.

Where It’s Used

“Add a very small amount of xanthan gum to give gluten-free dough elasticity.”
