The spirit of a summer table is freshness: light-colored linens, linen textures, and natural shades rest the eyes in the heat and bring a sense of coolness to the table. Instead of heavy decorations, a single glass pitcher with fresh greens or seasonal fruit is enough to enliven a summer table.

Food safety matters in the heat: serve cold appetizers on a bed of ice and keep butter and dairy products in the shade to preserve freshness. Keep plenty of ice water, lemonade, and ayran (a Turkish yogurt drink) ready in pitchers; they are essential for long summer meals.

Small touches that make a difference

Choose a light-colored tablecloth and linen texture to bring a cool feeling to the table.
Serve cold appetizers on a bed of ice or in a chilled container.
Keep butter, dairy products, and desserts in the refrigerator or on ice until serving, and in the shade, not in the sun, once they are on the table. Do not leave them out for more than 2 hours, or 1 hour if it is above 32°C / 90°F.
