Bake Turkish savory buns in a preheated oven at 180–190°C / 355–375°F for 20–25 minutes. It is ready when the top is golden and feels slightly firm to the touch. This temperature is high enough to cook the inside through while helping prevent the outside from burning quickly.

Why use this temperature range?

Savory bun dough is usually soft and contains yogurt, oil, and yeast or baking powder. At temperatures above 200°C / 390°F, the outside may brown quickly while the inside remains raw because soft dough transfers heat slowly. The 180–190°C / 355–375°F range gives heat enough time to reach the center.

How does size affect the baking time?

A standard-size savory bun, about 60–70 grams, bakes in 20–25 minutes. Smaller, bite-size savory buns take 15–18 minutes, while larger ones take 28–30 minutes. If you bake different sizes on the same tray, check the smaller ones first because they finish sooner.

Why might the bottom burn quickly?

A savory bun baked on a rack too close to the oven's bottom heating element may burn underneath while the top is still pale. Place the tray on the middle rack. If the bottom starts to darken, put a second, empty baking sheet underneath to reduce the direct heat.

Does brushing the buns with egg yolk change the baking time?

Savory buns brushed with egg yolk may look browned a few minutes sooner than unbrushed ones. In that case, follow the baking time rather than relying on appearance, and do not remove them early. If the egg wash is not spread in a thin, even layer, thicker areas may become darker and give a misleading impression.

How does the baking time change for frozen savory pastry dough?

Pre-shaped, frozen savory buns baked without thawing take 30–35 minutes. Use an oven setting 10°C / 18°F lower so the inside cooks evenly. Dough thawed overnight in the refrigerator takes nearly the same time to bake as fresh dough.

Does baking time change for filled savory buns?

Savory buns filled with cheese or ground meat should bake 3–5 minutes longer than plain ones because the heat must warm the dough and the filling. If using a ground-meat filling, cooling it before baking helps prevent its warmth from softening the dough too early and causing it to lose its shape.

What happens if the oven door is opened often?

Opening the oven door repeatedly during baking lowers the temperature inside and can make the buns rise more slowly than expected. It is especially important to keep the door closed during the first 10 minutes so the dough can rise properly. Check through the oven window and open the door only when truly necessary.

After baking, let the savory pastry rest on the tray for a few minutes. Moving them to a wire rack while still hot can cause the bottoms to steam and soften. Resting them on the tray for a few minutes lets some moisture escape and helps the bottoms stay crisp. If they are moved to a wire rack right away, moisture rising from underneath can soften the crust. This short rest is a simple way to preserve crispness and requires no extra ingredients.

Poğaçaları her zaman en alt rafta pişiriyordum ve altları hep koyu kalıyordu, orta rafa alıp altına boş bir tepsi koyunca hem üstü hem altı eşit renkte çıktı, gerçekten fark yarattı.
