Hard, low-moisture cheeses such as Parmesan tend to soften and remain grainy rather than melt, so they are usually sprinkled on top. On a mixed-cheese pizza, placing mozzarella on the crust and harder cheeses on top can create a more balanced appearance and texture.
How Can the Pizza Crust and Cheese Cook at the Same Time?
A thin pizza crust cooks in the oven at about the same rate as the cheese. With a thick crust, the cheese may melt and bubble while the crust remains doughy. A pizza stone or preheated baking sheet can help the bottom cook faster. Too much watery sauce can also make the crust soggy and slow its cooking. If this happens, bake the crust without cheese for a few minutes first, then add the cheese.
