Why is brewing with boiling water not recommended?
If boiling water at 100°C / 212°F is poured directly over coffee, bitter compounds are extracted quickly and in excess, making the coffee taste sharper and more burnt than expected. For this reason, let boiling water rest for 30 seconds to 1 minute before pouring.
What happens if the water is too cool?

How does altitude affect the boiling point?
At locations far above sea level, water boils below 100°C / 212°F, which also lowers the highest temperature that can be reached for brewing. In these locations, pouring the water immediately after it boils is preferred to reach the ideal brewing temperature.
Should the cup be preheated?
Hot coffee poured into a cold cup can lose a few °C within seconds; rinsing the cup with hot water in advance and warming it for 1 minute helps the coffee stay hot longer when served.
Do capsule or automatic drip machines follow the same rule?
Most automatic drip coffee makers are already set by their manufacturers to the 90–95°C / 194–203°F range, and the user generally cannot change this temperature. For this reason, people brewing by hand need to reach this range themselves with a thermometer or by waiting.
