Black tea is perhaps one of the most widely consumed drinks in Türkiye after water and is an essential part of daily life. Served everywhere from breakfast tables to work breaks, black tea stands out for its flavor and color when brewed properly. It can be served light or strong depending on the steeping time and amount of tea. Below are the traditional brewing method and ways to serve black tea.
Black tea in the kitchen
Black tea is served hot at breakfast and at other times of day. Serving it with lemon or milk gives it a different flavor. Its astringency depends on the steeping time and amount of leaves. The strength can be adjusted to personal preference; people with chronic conditions are advised to discuss their consumption with a doctor.
How is black tea brewed? In the traditional method, water is boiled in the lower part of a double teapot while a few spoonfuls of black tea are placed in the upper pot. Some of the boiling water is poured into the upper pot, which is then covered and left to steep over low heat for 15–20 minutes. This time allows the tea’s color and tannins to develop in balance. The brewed tea is diluted to the desired strength with boiling water from the lower pot. Brewing it first and diluting it, rather than leaving the leaves in boiling water for a long time, gives a more balanced flavor and helps avoid excessive tannin intake.
How do you choose fresh tea? Quality black tea has curled, large leaves and a dark brown-black color; tea made of dusty or very finely broken leaves is generally considered lower quality. Tea leaves that do not crumble easily when squeezed by hand have generally retained their freshness better. When stored in an airtight tin in a cool place away from light and moisture, tea can keep its aroma for months. Tea left in an open package absorbs moisture and odors from other foods in the kitchen.
What should you keep in mind about excessive consumption? Freshly brewed tea has a more noticeable aroma, while a very strong brew increases astringency. People with iron deficiency or anemia are advised to drink tea between meals and wait at least 1 hour after eating before drinking it. The amount of tea and steeping time can be adjusted to the desired strength in the cup. Older adults are also advised to drink it as light as possible and with lemon.
Ways to use tea at the table
Black tea can be used in the kitchen in ways beyond serving it in a glass. Brewed and cooled tea can be mixed with orange or apple slices to make refreshing iced tea. Tea leaves can also add a mild tannin contribution to some meat marinades. A small amount of brewed tea added to cake or cookie batter contributes a light aroma and color. Used tea bags are also traditionally used as cold compresses around the eyes.
