Ground cinnamon loses its aroma much faster than sticks, so grind it from a stick when you are ready to use it if possible.

Sprinkle cinnamon over rice pudding and kazandibi (caramelized milk pudding) for a classic flavor, or mix it into apple pie and cake batter to enrich their aroma. It also complements drinks such as salep, boza, and hot milk. In savory dishes, especially in Middle Eastern and North African cuisines, cinnamon adds depth to meat dishes and pilafs. A small cinnamon stick makes a noticeable difference in stews with cubed meat.

What flavors pair well with cinnamon?
Cinnamon’s warm, mildly sweet aroma pairs well with apples, pears, bananas, and honey, making it a favorite in winter desserts and hot drinks. Used with vanilla and cloves, it creates a deeper, spicier flavor profile. To make cinnamon water, steep one cinnamon stick in one 200 ml measure of hot water for 10 minutes and drink it warm.
