Yes—in most cases, a swollen package is a reliable sign that the food inside has spoiled. Swelling happens when bacteria or yeast produce gas, usually carbon dioxide, inside a sealed package, building up pressure. This gas production is evidence of unwanted microbial activity in contents that should remain sterile.
Why should swollen cans be taken especially seriously? If either end of a can bulges outward, it may be associated with a toxin produced by Clostridium botulinum bacteria. The toxin cannot be seen or detected by taste, but even a small amount can cause serious poisoning. Never open or taste a swollen can. Discard it directly without trying to check its smell; there are no exceptions to this rule.
What about vacuum-sealed packages and glass jars? If a vacuum-sealed package of meat, cheese, or a prepared meal becomes loose or swollen, the vacuum may have failed and air or gas may have entered. This usually means the package has a small hole or spoilage that produces gas has started in the food. In a glass jar, the metal button in the center of the lid is normally depressed. If it bulges outward, the jar has lost its vacuum seal. Not hearing the usual distinct pop when opening the lid can also indicate the same problem. A slight bulge in a carton of milk or juice may also result when an unopened package has been left in a hot place for a long time, such as in a car trunk. Even in that case, the package may be spoiled, so do not open it; discard it.
Is every bulge equally dangerous? No. Some carbonated drinks and fermented products, such as kombucha and certain pickles, may swell slightly because of natural fermentation. This is expected for those products and is generally noted on the label. However, swelling in a product that is not expected to ferment—such as canned food, prepared meals, dairy products, or vacuum-sealed meat or cheese—should always be treated as a serious sign of spoilage. Do not open or eat food from such a package.
What other signs should you check for? Leakage at the edges of the package, sticky residue, or a dried, crusted stain can also indicate that the seal has failed. These signs usually appear before swelling and can serve as an early warning. Rust on a metal can, especially along the seam near the lid, indicates that the can’s integrity may be compromised and air may be able to enter. Do not buy such a can even if it is not swollen. Packages from the same batch on a store shelf are expected to look similar. If one package is more swollen, dented, or faded than the others, there may have been a storage problem with that item, so do not choose it. Returning a suspicious package before taking it home and opening it is a practical way to avoid both waste and risk.
