The bread adds moisture and helps bind the mixture so it does not fall apart. Kneading the mixture a little longer after omitting the egg helps the particles hold together. This substitute can be useful for someone with an egg allergy because bread provides much of the egg's binding and moisture. Ground meat with enough fat can be held together by kneading it for a long time without adding a binder; proteins in the meat link together during kneading. This method does not work with lean ground meat, and the mixture will fall apart.
