How Can You Tell If an Oven Thermostat Is Faulty?

The clearest sign of a faulty oven thermostat is a difference between the set temperature and the oven’s actual temperature: even if a recipe calls for 180°C / 355°F, food may brown too early, or the outside may burn while the inside stays raw. This difference is a sign that the thermostat is not sensing and controlling the oven’s actual heat correctly.

How can you measure the difference?
The most reliable method is to place a separate oven thermometer inside the oven and set it to a specific temperature, such as 180°C / 355°F. If the thermometer still shows a significantly different reading after 15–20 minutes, the thermostat is sensing the actual temperature incorrectly. In a properly working oven, this difference usually does not exceed ±10°C / ±18°F. Another sign is that the oven’s preheat light turns off much sooner or much later than it should. The light normally turns off within a few minutes, but when the thermostat is faulty, it may stay on as if the oven has not reached its target temperature, or it may turn off early even though the oven has not heated up yet.

What patterns can you see in the cooking results?
If the same recipe, time, and setting produce inconsistent results over time—sometimes burning too early and sometimes remaining raw—that is also a typical sign of a thermostat failure. This inconsistency is easier to notice in delicate items such as cakes and cookies, because they are sensitive even to small temperature differences. Uneven heat distribution in different parts of the oven can sometimes be mistaken for a thermostat problem, but it is a separate issue: a thermostat problem usually affects the oven’s overall temperature, not just one rack. To tell the difference, place two thermometers on different racks at the same time and compare them.

When should you call for service?
If the measured temperature difference consistently exceeds 15–20°C / 27–36°F, or if the thermostat shuts off the oven before it heats up at all, the problem is persistent and will not fix itself. At that point, have an authorized service center replace the thermostat instead of guessing at lower or higher recipe temperatures; otherwise, you will have to make manual adjustments for every dish, and the risk of food being undercooked will remain. Some ovens show fluctuating symptoms before the thermostat fails completely: they may cook accurately for a week, then drift again the next week. This fluctuation indicates that the part has failed partially rather than completely and usually turns into a complete failure within a short time. For that reason, take measurements as soon as fluctuating symptoms appear to help catch the problem early. In older analog ovens with rotary knobs, the thermostat is a mechanical part, so it is expected to wear and drift gradually over the years. In ovens with digital displays, the drift usually appears more suddenly and noticeably. For this reason, checking the temperature of an analog oven with a thermometer once a year is a useful habit for catching problems early. In summary, a persistent difference between the set and measured temperatures, inconsistent cooking results, and abnormal behavior of the preheat light together indicate that the oven thermostat is faulty; this affects both food quality and food safety for meat and chicken dishes that are not cooked through. That is why doneness for meat and chicken should be judged by the internal temperature on a food thermometer, not by the oven setting: 74°C / 165°F for chicken and 71°C / 160°F for ground meat.

Fırın termometresi koydum, 180°C ayarına rağmen 15-20 dakika sonra hâlâ hedefin epey altındaydı. Aradaki farkı görünce termostatı servise değiştirttim, şimdi kekler eskisi gibi kenarları yanmadan ortası pişiyor.
