How Can You Tell If Ground Meat Has Gone Bad?

Do not use ground meat that smells unpleasant or has a sticky, slimy texture. Color alone is not a reliable safety measure; the interaction between meat pigments and oxygen can change its color. Harmful microbes can also be present in ground meat that looks and smells normal. Do not taste suspect ground meat.

What Signs Should You Watch For?
An unexpected unpleasant smell, sliminess, leakage or damaged packaging is a warning. Their absence does not prove that the meat is safe. Consider storage temperature, elapsed time and label instructions together.

How Should Ground Meat Be Stored?
Immediately refrigerate raw ground meat at or below 4 °C / 40 °F after shopping, and use within 1–2 days or freeze it. Keep it separate from ready-to-eat foods in a container that prevents juices from dripping onto other foods. Do not wash raw ground meat. Discard ground meat left at room temperature for more than two hours, or one hour when the temperature is above 32 °C / 90 °F.

Thawing and Refreezing
Ground meat thawed in the refrigerator can be refrozen within its safe refrigerated storage period; its texture may change. Cook ground meat thawed in cold water or a microwave immediately; do not refreeze it raw. Do not thaw it on the counter.

Can Cooked Ground Meat Spoil Too?
Yes. If cooled promptly and stored at or below 4 °C / 40 °F, use cooked ground meat within 3–4 days. When reheating leftovers, use a food thermometer to confirm that the center reaches 74 °C / 165 °F. Reheating is not a way to salvage spoiled meat or meat held beyond safe time limits.

Buying Ground Meat
Choose a cold product in intact packaging and avoid delays on the way home. Having it ground in front of you does not by itself guarantee safety; the source of the meat, clean equipment and the cold chain also matter. Do not infer shelf life from color or fat content.
