How Can You Tell If Oats Have Gone Bad or Turned Damp?

Oats going bad shows up most clearly through a musty, sour smell, clumping, and a color change that should not be there; fresh oats have a light, dry, grainy smell, while spoiled oats give off a sharp, damp odor. Because oats have a higher fat content than many other grains, they can turn rancid and pick up dampness if stored incorrectly for too long. What do smell and appearance point to?Fresh oats have a light, nutty, dry smell; once that is replaced by a sharp, musty or sour odor, the oats should no longer be eaten. In terms of color, fresh oats are a light beige-cream; darkening, grayish patches or black spots are signs of mold, and oats like this should be thrown out immediately. Oat flakes sticking together and clumping is the clearest sign that moisture has gotten into the packaging; dry oats stay loose and separate. How do you spot dampness or insect infestation?Oats that have absorbed moisture can form a wet, sticky mass at the bottom or edges of the bag; in this case, the whole package should be treated as suspect rather than just discarding the visible part, since the moisture may have spread throughout. Signs of insects include fine web-like threads or small brown bugs; this tends to show up in oat packages left open too long in warm, humid conditions. Oats with insects should not be salvaged by picking out the visible bugs; the whole batch should be discarded. How does proper storage delay spoilage?Once opened, oats should be kept in an airtight container in a cool, dark cupboard; oats left in an open bag both absorb moisture and pick up smells from the air around them. Assess dry oats’ storage period together with the product label and storage conditions; quality periods are not the same for every product. Keeping oats in the freezer is an effective way to extend their shelf life and delay rancidity, especially in hot climates. What should you do if in doubt?Do not taste oats to judge their safety if their smell, color, or texture is questionable. Do not sniff oats with visible or suspected mold; discard the suspect product. Cooked oatmeal, unlike raw oats, spoils much faster and should be eaten within 3 to 4 days from the fridge; discard cooked oatmeal left at room temperature for more than 2 hours, or 1 hour above 32°C / 90°F. Do not pour out or sniff a package suspected of mold to inspect it; discard it. Normal appearance and smell do not establish safety. Checking the production and expiration date on a newly bought pack is also a simple but effective precaution; a pack already nearing the end of its shelf life can start spoiling sooner no matter how well it is stored at home; it also makes sense not to stock up on more than needed and to choose smaller packages that will be used quickly.
