Fill an air fryer basket enough to cover the bottom in a single layer. If the food is piled on top of itself, hot air cannot circulate between the pieces; the food on the bottom steams instead of crisping like the pieces on top. As a general rule, do not fill the basket more than two-thirds full. The fill limit for a pressure cooker depends on the type of food: solid foods can fill up to two-thirds of the cooker, while foods that expand during cooking, such as rice and dried legumes, should fill no more than half.
What happens if an air fryer basket is overfilled?
When the basket is overfilled, hot air may circulate only around the top layer of food. The lower layers have less contact with the hot air and can trap steam under the weight of the food above them. Dividing the same amount of food into two batches and cooking them separately gives a more consistent result in less total time than crowding everything into one batch; two shorter cooking cycles are faster than one long, inefficient cycle.
How does the fill level affect cooking time?
A half-full basket cooks 2–3 minutes faster than a full basket because hot air can reach every surface of the food more easily. Recipe times are generally calculated for a moderately filled basket (about half full). If the basket is fuller, add a few minutes and stir the food once halfway through cooking. In a pressure cooker, the fill level does not affect cooking time as directly as it does in an air fryer, but steam pressure may take a few minutes longer to stabilize when the cooker is overfilled. For this reason, when cooking a crowded basket, check doneness after the cooking time ends by letting the food rest for 1–2 minutes rather than relying blindly on the recipe time.
What are the risks of overfilling a pressure cooker?
Pressure cookers usually have a maximum-fill line on the inside. Food above this line can block the steam vent and cause pressure to rise unevenly. This risk is greater with foods such as rice and lentils that foam and expand as they cook, so they have a separate, lower fill limit. Before closing the lid, make sure the fill level is below the line; this is the simplest way to help prevent the pressure valve from becoming blocked during cooking.
Does the fill level matter when cooking a small amount of food?
Cooking only a small amount in a basket or cooker can also cause problems. In an air fryer, light pieces such as leafy vegetables may be blown around by the fan and cook unevenly. In this case, placing a light rack or weight over the food can keep it from moving. In a pressure cooker, too little liquid may prevent pressure from building at all. Regardless of the amount of food, always follow the minimum liquid requirement for the type of cooker you have. You should also reconsider the cooking time when making a small amount. The recipe time may be too long when the basket or cooker is nearly empty, so check the food a few minutes early to reduce the risk of burning.
