How Long Can Soaked Legumes Stay in the Refrigerator?

Plan to soak chickpeas or dried beans overnight in the refrigerator and cook them the next day. A universal recommendation of 2–3 days, plus several more days by changing the water, is not a reliable rule.

Soaking. Use a clean, sufficiently large, covered container and enough water to keep the expanding beans submerged. Adjust soaking to the type of legume and a reliable recipe. Some legumes, such as lentils, may not need presoaking.

Before cooking. Discard the soaking water, rinse, and cook thoroughly in fresh water using a method appropriate for the product. Soaking does not replace cooking. Do not treat vinegar, baking soda, or water changes as ways to extend safe storage.

If plans change. Instead of delaying cooking for days, cook appropriately, chill promptly, and portion. Use cooked legumes within 3–4 days under refrigeration or freeze them. Do not try to rescue slimy, moldy, sour, or unpleasant-smelling beans by rinsing and cooking. Label the container with its preparation date.

Bir seferinde suyu değiştirmeyi unutup üç günü doldurdum, hafif ekşi bir koku vardı ama birkaç kez bol suyla durulayınca pişirdikten sonra hiçbir şekilde fark edilmedi, yine de bir dahakine iki günü geçirmemeye çalışacağım.

Kurban bayramı öncesi nohudu iki gün önceden ıslatıp buzdolabında bekletmiştim, suyunu bir kez değiştirince hiç köpürmeden pişti, üstelik pişme süresi de her zamankinden biraz kısa sürdü, gayet iyi sonuç aldım.
