Baking time for frozen börek and poğaça depends on their size, dough, filling, and whether they are raw or precooked. Why is there no single time?Baking every product at the same temperature for 35–40 minutes does not guarantee a safe result. Follow the package or a reliable recipe’s instructions for the frozen product; bake without thawing only when those instructions specify it. Dough containing raw flour must cook thoroughly; a meat-free filling does not make raw dough safe. What should be checked in the filling? The center of a raw ground red-meat filling must reach at least 71°C / 160°F, and a poultry filling at least 74°C / 165°F. Use a food thermometer. When reheating a previously cooked product, verify at least 74°C / 165°F at the center. How can you avoid a raw center?A browned surface or a clean toothpick does not prove that the filling reached a safe temperature. Complete the instructed cooking process and check the center of the thickest portion. If the top browns early, foil may be used as permitted by the recipe; this does not replace checking the center. Is thawing required? Some products are designed to cook from frozen. If thawing is required, follow the product instructions and use the refrigerator. How should the pan be prepared?Recipe-appropriate parchment or a lightly greased pan can reduce sticking; follow the paper manufacturer’s temperature limit. Do not assume that different areas of a large layered pastry cook evenly.
