How Long Do Frozen Foods Keep Their Quality?

To keep frozen foods at their best, keep the freezer below -18°C / 0°F and pack the food so it is not exposed to air. At that temperature food stays safe, but flavor and texture still shift slowly over time, so the real question of "how long" is about quality rather than safety. A properly packaged item stays fresh far longer than the same food exposed to air. If the freezer door gets opened and closed often, or the freezer is packed too full, the internal temperature can fluctuate — and those swings are another factor that speeds up freezer burn. Can a thawed item be refrozen? If a raw frozen item has been thawed in the fridge, refreezing it without cooking is not a safety problem, but each thaw-and-refreeze cycle wears down the texture a little more and increases moisture loss. An item thawed at room temperature, on the other hand, should not be refrozen. The safest approach is to freeze food in small portions to begin with and only thaw the amount that's actually needed. A dish that was already cooked before freezing can have its unused portion refrozen if it was thawed in the refrigerator. Do not refreeze food that has been left out of the refrigerator for more than 2 hours, or 1 hour above 32°C / 90°F. What is freezer burn and why does it happen? Freezer burn is the dry, grayish-brown patches that form when air movement inside the freezer evaporates moisture from the surface of the food. It is not dangerous, but the affected spot turns tough and loses flavor. The more air the food is exposed to, the faster freezer burn spreads, which is why sealing or vacuum-packing the bag tightly makes a real difference. Food with freezer burn is still safe to eat; the affected part can simply be trimmed off with a knife, or blended into a dish where the texture won't be noticed. How long can different foods be frozen for? Properly packed frozen vegetables hold their quality for about 8-12 months, and fruit for roughly 10-12 months. Cuts of red meat keep for 4-6 months, while ground meat and small diced cuts, which have more surface area, are best used within 3-4 months. Bread and other baked goods generally keep well in the freezer for about 2-3 months; after that they are still fine to eat, but the crust starts to toughen faster. How does packaging affect quality? Pressing out as much air as possible before freezing cuts the risk of freezer burn considerably. Flat-lying freezer bags, rather than glass jars, both save space and make it easier to squeeze out all the air; writing the freezing date on the bag also makes it easy to track what should be used first. When freezing anything liquid-based, the bag shouldn't be filled all the way to the top; liquid expands as it freezes, and an overfilled bag can split open in the freezer. Quick summary: Food kept below -18°C / 0°F in the freezer is safe, but for the best flavor, vegetables and fruit should be used within a year and meat within four to six months. Tight packaging is the single most effective way to slow down freezer burn. Refreezing a thawed item without cooking it is safe, though the texture loses a little more each time, and food with freezer burn doesn't need to be thrown out either.
