How does the type of mushroom affect cooking time?

Large, meaty mushrooms such as portobellos need longer to cook because they are thicker and contain more water. Small varieties such as button mushrooms and İstanbul mushrooms cook faster. King oyster mushrooms fall in between and take 15–18 minutes.

Does the filling affect cooking time?

Mushrooms stuffed with cheese and breadcrumbs are ready a little sooner than those with raw vegetable filling because melted cheese gives a visual cue that they are ready. Vegetable fillings may take 3–5 minutes longer because the vegetables also need to cook.

How long do grilled mushrooms take?

On a crowded sheet, the mushrooms touch one another, trapping steam and adding about 3–5 minutes to the cooking time. Arrange the mushrooms in a single layer with space between them. If the sheet is too crowded, using two separate baking sheets gives more even browning in less time than one crowded sheet.
