Buckwheat cooked in boiling water, covered, over low heat becomes tender and separates into individual grains in 15–20 minutes. Roasted buckwheat (kasha) cooks a little faster, in 12–15 minutes.

How Does the Water Ratio Affect Cooking Time?
Using two measures of water for one measure of buckwheat and bringing it to a boil helps the grains cook without sticking together too much. Increasing the amount of water does not extend the cooking time, but it makes the result softer and closer to porridge. Buckwheat cooked with less water absorbs it in 15 minutes and stays firmer.

Does Roasted vs. Unroasted Buckwheat Make a Difference?
Roasted buckwheat (kasha) loses some moisture during roasting, so it softens more quickly in water and is ready in 12–15 minutes. Unroasted green buckwheat has a firmer outer layer and takes 18–20 minutes. Mixing the two types and cooking them for the same length of time results in uneven texture.

Does Soaking Shorten the Cooking Time?
Soaking buckwheat in warm water for 30 minutes before cooking shortens the cooking time by about 3–5 minutes and helps it cook more evenly. Soaking is not required, but it is recommended especially for unroasted grains. Unsoaked grains may sometimes soften on the outside while remaining slightly firm inside.

Is the Oven Cooking Time Different?

Should Buckwheat Be Cooked Like Pilaf or Porridge?
For pilaf-style buckwheat, let it cook until the water is fully absorbed, about 15–18 minutes. Turn off the heat and let it rest for 5 minutes; this loosens the grains and separates them. For a porridge-like consistency, increase the amount of water and cook for up to 20–22 minutes.

How Can You Tell When It Is Done?
The most reliable way to check whether buckwheat is cooked is to taste a few grains. They should offer slight resistance to the teeth but should not have a hard center. If the water seems absorbed but a grain is still firm, let it cook over low heat for another 2–3 minutes.

Common Mistakes
The most common mistake is frequently opening the lid and stirring. This lets steam escape and can crush the grains, turning them into porridge. Another mistake is adding water by eye instead of measuring it; too much water makes the result mushy, while too little can make it stick to the bottom. Measured water and patient cooking without stirring give the most reliable result.

How Should Buckwheat Be Cooked for Salad?
For cold salads, remove the buckwheat from the heat just before it has absorbed all the water, drain it, and rinse it immediately with cold water. This prevents the grains from overcooking and sticking together. Buckwheat left to stand while hot continues to cook as it cools and may become softer than expected for a salad.

Do Not Confuse It with Bulgur
Although buckwheat looks like bulgur, they taste different and have different cooking times. Fine bulgur is ready in 10–12 minutes, while buckwheat takes at least 15 minutes. Cooking them together in the same pot for the same amount of time can cause the bulgur to fall apart while the buckwheat remains firm.

Kavrulmamış yeşil karabuğdayı ıslatmadan direkt pişirsem süre ne kadar uzar, yoksa taneler eşit pişmeyip bir kısmı sert mi kalır diye çekiniyorum? Elimde zaman azken bu adımı atlamak ne kadar riskli olur?

Islatmadan da pişirebilirsiniz, yalnızca süre 18-20 dakika yerine 22-25 dakikaya çıkar ve karıştırmadan sabırla beklemeniz gerekir. Zamanınız kısıtlıysa tanenin üstüne 5 dakikalık sıcak su banyosu bile küçük bir fark yaratabilir.
