How Long Does It Take to Cook Chicken Liver?

Chicken liver cooks in oil over medium-high heat in 6–8 minutes total, 3–4 minutes per side. Chicken liver must be cooked completely, to an internal temperature of 74°C / 165°F, with no trace of pink in the center, because poultry carries a higher risk of Salmonella than red meat. Chicken liver cooked on skewers over a grill takes 8–10 minutes depending on the size of the pieces, and should be turned frequently.

Why Does Chicken Liver Need to Be Cooked Completely?
Red-meat liver should also be cooked to an internal temperature of 71°C / 160°F, but chicken liver carries a higher risk: poultry meat and organs may carry bacteria such as Salmonella more often, so every part of the chicken liver needs to be cooked through. No trace of pink when the thickest piece is cut in the middle, and clear juices, are signs that it is well cooked. But the reliable test for safety is temperature, not color: the thickest piece should reach 74°C / 165°F on a kitchen thermometer. If one piece is in doubt, set it aside and leave it in the pan for a few more minutes; this is much more practical than cooking the whole batch again.

Does Cooking It in Butter Change the Time?
Chicken liver cooked with onions in butter should be cooked over slightly lower heat because butter has a lower smoke point, and the time may extend to 7–9 minutes; this prevents the butter from burning and turning bitter. Cooking with olive or sunflower oil does not change the original 6–8-minute time because these oils can withstand higher heat. Cook the onion by itself for 4–5 minutes until soft before adding the liver; this prevents the onion from burning and keeps the liver from staying in the pan longer than necessary.

How Do You Check Chicken Liver Cooked on Skewers?
Cook chicken liver pieces on skewers over hot coals or on a grill for 8–10 minutes, turning them every 2–3 minutes. Take one of the largest pieces off the skewer and cut it into 2 halves to check; if the inside is still dark red, put it back on the skewer and leave it over the heat for a few more minutes. Thread the pieces with small gaps between them instead of having them touch so the heat reaches every surface evenly.

How Does Overcooking Affect the Texture?
Chicken liver has a more delicate texture than red-meat liver, and if you go 2–3 minutes past the recommended time, it quickly dries out and becomes grainy. Properly cooked but not overcooked chicken liver should be slightly crisp on the outside and dense yet still moist inside.

Does Preparation Before Cooking Affect the Time?
If you remove the membrane and yellow fat pieces from the chicken liver before cooking and dry it thoroughly with a paper towel, it will brown faster as soon as it touches the pan, and the total cooking time may be reduced by a few minutes. Wet liver first releases steam in the pan, delaying browning and slightly increasing the time. Cutting the pieces to a similar size also helps all of the liver cook at the same time. Bringing liver taken from the refrigerator to room temperature 10–15 minutes before cooking also prevents the outside from browning too much while the inside is still cold.
