How Long Should a Cinnamon Stick Boil in Liquid to Release Its Flavor?

When a cinnamon stick is boiled in a liquid (milk, water, or syrup), it generally needs to boil for 10–15 minutes to release a noticeable amount of aroma. A shorter time transfers a light scent, but cinnamon’s main sweet, spicy notes become clear only by the end of that time.

Why Does It Take So Long?
Cinnamon’s aroma comes from volatile oils in the bark, especially cinnamaldehyde, and these oils are compounds that take time to dissolve in water. Compared with ground cinnamon, a cinnamon stick releases its aroma more slowly because the oils diffuse to the surface only gradually while the bark remains whole. Keeping the liquid at its boiling point (about 100°C / 212°F, slightly lower for milk) while boiling helps the aroma develop faster; however, if the liquid is left boiling for too long, the cinnamon can leave a slight bitterness.

How Many Sticks Should You Use?
1–2 medium cinnamon sticks are enough for 1 liter of liquid; more will increase bitterness rather than deepen the aroma. Remove the sticks from the liquid when boiling is done. Otherwise, they will continue to flavor it as it cools, and the drink may develop a stronger taste than expected.

How Does It Compare with Ground Cinnamon?
Ground cinnamon flavors liquid within seconds because of its larger surface area, but it settles and makes the liquid cloudy. For a clear drink or syrup, cinnamon sticks are therefore preferable. Ground cinnamon is generally added during the final minutes of cooking, while a cinnamon stick is placed in the liquid from the beginning.

Does It Make a Difference in Milk-Based Drinks?
Cinnamon boiled in milk takes a little longer than in water (15–20 minutes) to release its full aroma because milk proteins and fat slow the spread of volatile compounds compared with water. Stir milk-based cinnamon drinks frequently while boiling to prevent the milk from sticking to the bottom.

Is There a Way to Release the Aroma Faster?
Lightly crushing or breaking a cinnamon stick into 2 pieces before boiling exposes its inner surface to the liquid, allowing the aroma to develop faster, in about 8–10 minutes. However, strain the liquid through a fine-mesh sieve at the end so small pieces of bark do not get into the drink.

Does an Old Cinnamon Stick Make a Difference?
A cinnamon stick stored for a long time with a weak aroma will not release as strong a scent as a fresh stick, even when boiled for the same amount of time. In that case, boil it for a few extra minutes or increase the number of sticks. A cinnamon stick is still fresh if it gives off a sharp, sweet aroma when broken.

Can a Cinnamon Stick Be Used a Second Time?
A cinnamon stick that has been boiled once has lost most of its aroma, but not all of it; it can be dried and used again in a second boil, with a few extra minutes added to the time. The aroma from the second use will be noticeably lighter than the first, so a fresh stick is preferable for a new recipe. Used sticks can be dried and stored in a spice jar for a few weeks; however, the remaining aroma fades over time, so boiling them more than 2 times offers little practical benefit.
