How Long Should Turkish Coffee Brew Without Losing Its Foam?

Turkish coffee brews on low heat: once the mixture in the pot reaches 50–60°C / 122–140°F and foam forms, that foam is spooned into the cups, and the rest keeps cooking until it reaches 90–95°C / 194–203°F, close to boiling — the whole process usually takes 3-5 minutes. Why low heat?A pot that heats up fast on high heat doesn't give the finely ground coffee time to form foam before it settles, and the mixture can boil over suddenly. Low heat lets warmth rise slowly from the base of the pot, letting the foam build up in a controlled way. Why does the foam matter so much?The layer of foam on top, once poured into the cup, seals off the grounds underneath from air and helps the aroma last longer. Turkish coffee served without foam is traditionally considered incomplete. To catch the foam before it's lost, the pot should come off the heat right as the surface starts bubbling, with the foam spooned into the cups first; the pot then goes back on the heat to finish boiling the rest. Does timing change with the number of cups? A single-cup pot can finish in 2.5-3 minutes, while a four-cup pot, with more liquid, takes 5-6 minutes. A narrow, tall pot helps the foam form faster and higher than a wide, flat one. When should sugar go in? Sugar should be stirred in with the coffee and cold water right at the start, before the pot goes on the heat; adding it once the coffee has started boiling both kills the foam and makes it harder to dissolve evenly. What happens if it is boiled too long? Coffee boiled too long lets the grounds mix back in before settling, leaving a thick, bitter cup, and the foam breaks up and nearly disappears. Catching the right moment matters more than watching the clock. Does an induction cooktop make a difference? Heat rises much faster on induction, so even on the lowest setting timing can shorten by 1-2 minutes compared to a gas stove; the pot needs checking more often on induction, and lifting it off the heat when needed. Does pot size affect the foam? A pot much larger than the amount of coffee spreads the foam thin, while one too small raises the risk of boiling over; picking a pot size close to the number of cups makes both the foam quality and the timing easier to control. Does the pot material change the timing? Copper conducts heat faster and more evenly than steel, so foam tends to form about half a minute sooner in a copper pot. In a steel pot, where heat spreads more slowly, turning the pot gently every so often helps warmth reach the base evenly. Does starting with warm water instead of cold shorten the process? Starting with room-temperature water instead of water straight from the fridge shaves roughly 30-40 seconds off the brew; but starting with very hot water can make the fine grounds settle too soon, weakening the foam. That's why cold water, even if it takes a touch longer, gives the more reliable foam.
