A glass of boza (about 250 ml) contains an average of around 210 calories. This helps explain why boza is considered more filling and calorie-dense than many other fermented drinks. Most of its calories come from corn or millet flour and added sugar; it has a much higher energy value than milk-based fermented drinks such as ayran or kefir. What determines boza’s calorie content? Sugar is the biggest factor. Homemade, lightly sweetened boza may have 50-70 fewer calories per glass than sweeter store-bought versions. The type of grain makes a smaller difference: boza made with millet flour has a slightly lighter consistency and a similar calorie content to corn-flour boza. How does it compare with other fermented drinks? Milk-based fermented drinks such as kefir and ayran contain about 60-100 calories per glass, while boza can have more than twice that amount because of its grain and sugar content. Pickle brine is nearly calorie-free because it contains no grain or sugar. Kombucha is also a low-calorie fermented drink, usually containing 30-50 calories per glass, far less than boza. When and how much boza should you have? Given its high calorie content, boza may make more sense as a snack between meals or as part of breakfast than as an addition to a main meal. A large glass with a main meal can easily push you over your daily calorie target. Cinnamon and roasted chickpeas sprinkled on top do not add many calories; a pinch of roasted chickpeas adds only a few. In winter, street-vendor boza is usually sweeter than homemade boza. Since sweetness is difficult to estimate by sight, keeping portions small is a reasonable approach if you drink it often. Does fermentation change its calorie content? During boza fermentation, some of the starch in the grain turns into sugar and some into a small amount of alcohol. This does not noticeably reduce the total calories; it only changes the form of the energy somewhat. Therefore, the assumption that fermented drinks are low in calories does not apply to boza. As homemade boza ferments longer, it becomes more sour, and the amount of sugar added to sweeten it is usually adjusted accordingly. This makes the calories per glass dependent on the recipe. What meals is boza served with? Traditionally, boza is served with cinnamon and roasted chickpeas as a light late-afternoon drink or as part of a winter breakfast. Having it with a main meal noticeably increases the meal’s total calories. If choosing boza instead of a sports drink or light snack, consider its calorie density and reduce portions at other meals to balance it. Choosing a small glass (150 ml) is a simple way to balance daily calories without giving up boza’s flavor.
