How Many Days Does Kombucha Take to Ferment?

Kombucha fermentation time depends on temperature and the recipe; taste or the number of days alone cannot establish safety. Why is there no single time?NCHFP’s research-tested recipe specifies fermentation at 20–25°C / 68–77°F for 7–10 days; that period applies only together with the recipe’s ingredient quantities, suitable containers, and hygiene steps. The starter liquid must have a pH of 4.0 or below; this one condition does not replace the complete process. How long should secondary fermentation last?There is no general safe period for leaving a sealed bottle at room temperature for several days. Continued fermentation can increase pressure; opening a bottle once a day is not a safety guarantee. Once the recipe is complete, transfer the drink to cleaned and sanitized bottles and refrigerate immediately. How should taste be assessed?Taste indicates flavor preference only; it is not a safety test. Do not taste a drink with uncertain production conditions or mold. If mold appears, discard the drink and culture; do not use them as salad dressing or starter for a new batch. Do SCOBY age and tea type affect the time?Do not shorten the safe process based on culture thickness or tea type; follow the chosen validated recipe. Does fermentation time determine probiotic content?Longer fermentation does not establish proven probiotic benefits or safety. What happens after bottling?Keep it refrigerated and discard kombucha made according to the NCHFP recipe after 30 days. This period is not a reason to consume a suspect drink.

Yazıda 7-10 gün deniyor ama benim mutfağım serin olduğu için 14 günde bile istediğim ekşiliğe ulaşamadı, hâlâ tatlı kalıyordu. Sürenin bu kadar geniş bir aralıkta değişebilmesi kafa karıştırıcı oldu.

Serin mutfaklarda bu tamamen normal, 18-20 derecede fermantasyon gerçekten 10-14 güne kadar uzayabiliyor. Kaseyi biraz daha sıcak bir köşeye taşımanızı, ya da aynı süre içinde tadımı sıklaştırıp ekşilik yakalandığında hemen şişelemenizi öneririm.
