How Many Hours Can Cooked Food Safely Sit at Room Temperature?

Cooked food can safely sit at room temperature for up to 2 hours; if the room is above 32°C / 90°F, that window shrinks to just 1 hour. The reason is that food sitting between 5–60°C / 40–140°F enters the range where bacteria multiply fastest — even if nothing looks, smells or tastes different, bacterial counts can climb to unsafe levels well before any of that changes. Why Exactly 2 Hours?Food safety guidance treats this range as the danger zone, where many harmful bacteria can increase 2-fold roughly every 20 minutes. The 2-hour limit is set so that bacteria stay within a safe range before any smell or appearance change would tip you off — which is exactly why the thought “it still smells fine” is not a reliable test. Why Does Hot Weather Shorten the Window?In summer, room temperature can easily climb past 32°C / 90°F, pushing food into the danger zone much faster, which is why the safe window drops to just 1 hour. At picnics, buffets or anything served outdoors, that 1-hour limit matters most for meat, poultry, dairy and mayonnaise-based salads. How Do You Cool Food Down Safely?Putting a large pot of hot food straight into the fridge leaves the center sitting in the danger zone for far too long; instead, split it into shallow containers, let it cool a little at room temperature, then get it into the fridge within 2 hours. A hot pot placed directly in the fridge can also raise the fridge's own internal temperature, so wide, shallow containers work best. How Long Does It Keep in the Fridge?Once it is refrigerated within that 2-hour window, most cooked food keeps safely for about 3-4 days, though the exact time depends on what is in it, and meat or poultry dishes are best used a little sooner. Food that has already sat out past 2 hours is not made safe again just by putting it in the fridge afterwards.
