How Many Minutes Should Bread Dough Rise the Second Time?

Shaped bread dough needs its second proof to last 45 to 60 minutes before it goes into the oven; the exact time shifts with the dough's size, the room's temperature, and how active the yeast is. This second rise is when the dough, now in its final shape, builds back volume and develops its airy texture. Why does dough need a second rise?The first rise after kneading builds up the dough's overall volume, but shaping presses much of that gas back out as the dough is worked into its final form. The second rise lets the dough build gas again in its finished shape, so it puffs up evenly in the oven instead of cracking. What changes the timing?At a room temperature around 24-26°C / 75-80°F, the rise finishes in 45 to 60 minutes; in a cooler space (18-20°C / 65-70°F), it can stretch to up to 90 minutes. For a slow overnight rise in the fridge, the dough should come back to room temperature for 30-40 minutes before baking. How do you know it's risen enough?Press a finger gently into the surface of the dough; if the dent springs back slowly and only halfway, it's ready to bake. If it springs back instantly and fully, it needs more time; if it doesn't spring back at all, or the dough starts to sink, it's over-proofed. What happens if it over-proofs?Over-proofed dough has already used up its capacity to expand by the time it hits the oven, so it doesn't rise as much as expected and bakes into a flatter, denser loaf; the inside can also lose its irregular, open crumb and turn dense and tight instead. If you catch it over-proofed, gently reshaping it and giving it a short additional rise can salvage some of the lift. Does the timing change by bread type?Long, thin loaves like baguettes usually finish their second rise in a shorter 30 to 40 minutes, since thin dough spreads heat and gas faster. A large round loaf takes up to 60 minutes, since the center takes longer to rise. Does a humid environment shorten the rise?Covering the dough with a damp cloth and letting it rise in an enclosed space, like an oven with the light on but the heat off, keeps the surface from forming a dry skin and can help the rise finish a touch faster than in a dry room. If you can't create that humidity, stretching plastic wrap loosely over the dough does something similar. Choose a sheltered spot, such as an oven or under a pot lid, where there is no airflow; a drafty counter can keep the dough from rising evenly. Do not leave too much empty space around the dough in its container: an oversized container can let the dough spread sideways instead of rising upward, making its rise harder to track. A container about twice the dough’s expected final size makes it easier to monitor and greatly reduces the chance of overflow. Does whole wheat flour change the timing?Dough made with whole wheat flour, where the bran weakens the gluten network, takes 10-15 minutes longer to finish its second rise than dough made with white flour. The finger-poke test needs a bit more care with this dough, since the bran texture can slightly change how fast the dent springs back.
