How Should Dried Mushrooms Be Stored Compared With Fresh Mushrooms?

Dried mushrooms need to be stored under very different conditions from fresh mushrooms. Fresh mushrooms are delicate and should be used soon when stored in the refrigerator, while dried mushrooms can be kept for months without spoiling at room temperature in an airtight container in a cool, dry, dark cupboard.

Why do dried mushrooms last so long? Drying removes almost all the water from the mushrooms. Since much of the moisture microorganisms need to multiply is gone, spoilage largely stops. When stored properly, dried mushrooms can be used for 1–2 years, although their aroma gradually fades.

What happens if they absorb moisture? If dried mushrooms are kept in a damp place, they absorb water again and may develop mold even faster than fresh mushrooms, because the natural protective layer lost during drying does not form again. Close the jar immediately after each use, and do not touch the mushrooms with a damp spoon. A jar kept near a dishwasher or stove may face an even greater risk because of the steam.

What should you do before using them? Soak dried mushrooms in warm water for 20–30 minutes before cooking to soften them. If you skip this step, they may remain tough and difficult to chew. Using boiling water instead of warm water can make their texture too soft. The soaking water carries the mushrooms’ concentrated flavor, so it can be strained and used in soup or sauce. Remove any sand or dirt settled at the bottom with a fine sieve or coffee filter.

How are they different from fresh mushrooms? Fresh mushrooms can be stored in a paper bag in the refrigerator for only 4–7 days, and may shrink as they lose moisture during that time. Drying removes this short shelf life and makes mushrooms available even when they are out of season. The two types also differ in flavor intensity: some aromatic compounds become concentrated during drying, so dried mushrooms generally have a stronger flavor.

How should soaked mushrooms be stored? Drain soaked mushrooms that will not be used and store them in a covered container in the refrigerator for 2–3 days. Once rehydrated, they are more like fresh mushrooms and should follow the same short storage window. Rehydrated mushrooms can also be frozen for longer storage, but their texture will be somewhat softer after thawing. For that reason, frozen rehydrated mushrooms are generally better suited to dishes such as sauces and soups, where a softer texture is not a problem.

Does the storage time change after opening? Opened dried mushrooms do not last as long as they do in a sealed package. If they are not transferred to an airtight jar, they may absorb moisture and soften within a few months. Dried mushrooms transferred from their original package to a glass jar can be kept for up to 1 year while staying close to their original quality. Writing the opening date on the jar makes it easier to keep track of this one-year period. This small detail can prevent confusion when several packages are stored on a crowded pantry shelf.
