There is no single storage rule for homemade pickles and fermented foods. The vegetable, salt/acidity balance, fermentation, and any subsequent heat processing all matter.
Fermented pickles. Follow a tested recipe, keep vegetables submerged with a suitable weight, and maintain the recipe's fermentation conditions. Improvised additions of water or brine can change the proportions. Refrigerate once fermentation is complete. The 4–6 months of refrigerated storage specified in NCHFP's particular dill-pickle recipe should not be transferred to other products.
Pantry storage. A closed lid is not enough for pantry storage; shelf storage requires a tested canning process suitable for the product. Do not put a merely fermented product in the pantry just because it is closed.
Spoilage and use. Cloudiness alone does not prove spoilage. Discard soft, slimy, or unpleasant-smelling pickles. Do not automatically identify a surface film as harmless yeast; do not consume products with mold or an unidentified film. Use clean utensils. Live cultures do not guarantee either a proven probiotic benefit or safety. For other fermented products, follow their own label or recipe instructions.
