How Should Pistachios and Almonds Be Stored Differently From Other Nuts?

Pistachios and almonds have a lower fat content than walnuts or hazelnuts, so at room temperature they tend to stay fresh a bit longer before turning rancid than most nuts — but for the longest shelf life they should still be kept somewhere cool and dark, in an airtight container. Do in-shell or shelled nuts last longer? Pistachios in the shell last longer than shelled ones because the shell limits contact with air; in-shell pistachios can keep for about 6 months at room temperature, while shelled pistachios start losing freshness within 2-3 months under the same conditions. A similar gap applies to almonds, though almonds are usually sold shelled, so that option is rarely available at the store. If in-shell almonds are found, they can be treated the same way as in-shell pistachios and kept in a cool pantry. How are roasted nuts different? Roasted pistachios and almonds go rancid faster than raw ones, because roasting brings the oil closer to the surface and increases its exposure to air. Roasted nuts are best used within 1-2 months of purchase — a tighter window than for raw nuts. Nuts roasted at home tend to have an even shorter life than store-bought ones, since a home oven offers less precise temperature control. Should salted nuts be stored differently? Salted roasted pistachios and almonds last a little longer than unsalted ones, because salt somewhat reduces moisture retention; but that difference is only a few weeks and does not change the general storage rules; in both cases the deciding factor is the tightness of the lid and how dry the environment is, not the salt. Can they be frozen? In a sealed bag, pistachios and almonds can stay fresh for up to 1 year in the freezer — longer than the freezer life of some other oily nuts, which is handy for a large bag bought at once. Frozen pistachios and almonds thaw in about 30 minutes at room temperature and can be used right away. What should you check when buying? Pistachios or almonds left sitting a long time in a clear bag on a store shelf may have already used up part of their freshness from light exposure; opaque packaging or a closed container is the better choice. If you buy a large bag, setting aside whatever you will not finish soon and freezing it is the safest approach; this small habit can add months to the shelf life. How can you tell if they have gone rancid? Rancid pistachios or almonds smell sharper and more paint-like than fresh ones, and leave a faint metallic or soapy taste when eaten. If you notice this, discard the batch rather than finishing it, and check any other nuts stored in the same container, since rancidity usually affects the whole batch. Smelling a suspicious handful closely before tasting it is the fastest way to catch rancidity early.
