How Should You Match Red Meat and Offal Cuts to the Dish?

Choose meat cuts for the cooking method: cuts with more connective tissue, such as shank or shoulder, may suit long moist cooking, while tender cuts such as tenderloin may suit shorter cooking. Fat content, thickness, and recipe also affect the result.

Preparing offal. Prepare liver or kidneys with clean utensils; do not wash raw meat, since splashing water can spread germs. Soaking in milk or another liquid may affect flavor but is not disinfection. Soak under refrigeration, discard the liquid, and clean contacted surfaces.

Cooking. Cook beef or lamb liver and kidneys to an internal temperature of at least 71 °C / 160 °F, verified with a food thermometer. Poultry giblets require 74 °C / 165 °F. Do not define the process only as “brief cooking”; time varies with size and method. Follow a reliable, product-appropriate preparation and cooking recipe for tripe and trotters.

Buying and storage. Choose refrigerated products of known origin; appearance or a familiar butcher is not a safety guarantee. Refrigerate offal promptly and use within 1–2 days or freeze. Do not try to rescue suspicious food by cooking it.

Kaburga eti bulamadığım için köfteyi tamamen kürek etinden çektirdim, yazınızdaki gibi but etinden çekilenden daha sulu çıktı ama kaburgalı karışıma göre biraz daha az lezzetliydi.
