How to Adjust Yeast and Baking Powder When Scaling a Recipe

Baking powder increases linearly with the flour because the chemical reaction is proportional to the amount used. Yeast is alive and multiplies in the dough; increasing yeast linearly in a larger batch speeds fermentation, leaves the flavor underdeveloped, and makes the dough harder to control. These 2 ingredients sit on the same shelf and seem to do the same job, but one is a consumable ingredient and the other is a multiplying culture.

Two ingredients that sit on the same shelf and seem to do the same job behave very differently when a recipe is scaled. Baking powder is a chemical mixture: it reacts with moisture and heat, releases gas, and is used up. The amount of gas it releases is directly proportional to the amount added. Yeast, by contrast, is a live culture that uses the sugar in the dough to multiply and increase its own population. One is a consumable ingredient; the other is a growing population. That difference matters when scaling a recipe. Their similar appearance and packaging make the difference easy to miss.

The baking-powder and baking-soda side is simple. If the dough is scaled to 2 times its original size, use 2 times as much leavener; if it is scaled to 3 times its original size, multiply the leavener by 3. This happens automatically in Korpus’s baker’s-percentage system, where each ingredient is listed as a percentage of the flour and all the amounts increase together when the flour amount increases. The main consideration is measurement: because the leavener is used in a small amount, the result of multiplying it may still be small, and weighing it is more consistent than measuring it with a spoon. Baking soda belongs in the same group, but it works only when the recipe contains an acid.

With yeast, multiplying it in a straight line can ruin the dough. If you put 2 times as much yeast in dough that is 2 times as large, fermentation proceeds faster than expected; the dough rises quickly, but the flavor does not develop because flavor comes from byproducts produced while yeast works slowly. Quickly risen dough also collapses more easily and does not rise as expected in the oven. That is why yeast in a larger batch is not increased linearly; keep it close to the recipe’s original proportion and reduce it slightly if needed. If you change the type of yeast, apply that type’s conversion ratio separately; do not combine the 2 adjustments.

Make the decision together with the timing, because yeast and time can substitute for each other. Less yeast over a longer time produces the same rise and leaves a deeper flavor. If you are preparing dough ahead for a large gathering, reducing the yeast and extending the time gives a better result and makes kitchen timing easier. Ambient temperature also matters: the same amount of yeast works faster in a warm kitchen, so less yeast is needed in summer than in winter.

Check the dough, not the clock; this rule applies regardless of scale. You can tell when the dough is ready by how much its volume has increased and how slowly an indentation closes after you press it with a finger. A large mass of dough may be ready sooner than expected because it retains its own heat better; a small batch may take longer on a cold counter. The recipe’s stated time is therefore an estimate, and for a scaled-up recipe it becomes even more approximate. For a large batch, watch the dough itself the first time rather than relying on the clock.

İki kat hamurda mayayı aynen bırakıp süreyi biraz uzatmak denenmiş bir yol mu?

Denenmiş ve iyi sonuç veren bir yol. Hamur ikiye katlandığında maya çoğu zaman bir buçuk kat yeterli oluyor; aynen bırakılırsa mayalanma yarım saat kadar uzuyor ve tat daha derin çıkıyor.
