How to Choose Fresh Herbs and Spot the Wilted Ones

The freshness of parsley, dill, mint and arugula comes down mainly to leaf color and how the stem behaves: vivid, dark green leaves signal a recent harvest, while yellowing or blackened edges mean the bunch has already been sitting a few days. A bunch is fresh if its stem bends and snaps easily; if it just bends without snapping, it's likely been on the shelf for a while and already losing moisture. Smell is a reliable clue too — rub a fresh bunch between your fingers and it gives off a distinct aroma, while a stale bunch barely smells at all. What do leaf color and stem tell you? In fine-leaved herbs like parsley and dill, yellowing usually starts at the outer edges of the bunch and works inward; a little yellowing is a small loss you can just trim off, but if most of the bunch has yellowed, its freshness is mostly gone. In broader-leaved herbs like mint and arugula, dark, glassy-looking patches point to frost damage or excess moisture instead. If the stem tip has turned brown or doesn't leave a moist mark when squeezed, the bunch has probably been sitting for more than a week. How do you spot a wilted bunch? A wilted bunch has leaves that droop instead of standing upright, and a stem that bends without snapping cleanly between your fingers. If there's a slimy film between the leaves or a distinct moldy smell, the bunch hasn't just wilted — it's started to rot. In herbs like arugula and watercress, wilting usually shows up as thinning, semi-transparent leaves, while parsley and dill tend to dry out and shrivel instead. What should you look for when buying? For herbs sold in bunches, it's more reliable to check the leaves in the middle of the bunch rather than the outer ones — sellers often arrange the freshest leaves on the outside and the older ones inside. For herbs like basil and mint sold with roots attached, white, moist roots are a sign they'll stay fresh longer than ones sold with just a cut stem. For pre-washed, bagged herbs, check how much moisture has built up inside the bag — a fogged-up bag usually means the herbs have been sitting in there for a few days already. How do you keep herbs fresh once home? Herbs should be checked as soon as they get home, with any yellowed or blackened leaves picked out — that sorting helps the rest of the bunch last longer, since a spoiling leaf can quickly affect the healthy ones around it. Herbs with their stems trimmed and stood in a glass of water stay crisp for days longer than ones left in a bag in the fridge. Doing this simple check both while shopping and after getting home cuts down significantly on herbs going to waste within just a few days. Do dried herbs need the same eye as fresh ones? Dried herbs need an entirely different eye than fresh ones: shopping for dried thyme or mint, what matters is that the color hasn't faded and the leaves haven't crumbled into dust. The vibrancy and moisture you look for in fresh herbs is actually a warning sign in dried ones — a dried herb that's stayed damp is prone to mold. If a recipe calls for fresh herbs and you're using dried instead, cut the amount down to roughly a third; drying concentrates a herb's flavor, and too much dried herb can easily overpower a dish.
