How to Crack Shell-on Nuts Easily

A practical way to crack shell-on nuts is to place the nut in a nutcracker with its thin edge, or seam, facing up and apply pressure along the seam. Nuts with two shell halves, such as walnuts and almonds, are more likely to release an intact kernel when cracked along this line. Squeezing the thickest part can transfer pressure to the kernel and crush it instead of splitting the shell. Finding the right spot can produce a cleaner crack with less force.

How to Remove a Walnut Kernel Whole

A walnut shell has a thin seam joining its two halves. Place the nutcracker over the seam, closer to the center than to the tip, for a cleaner crack. Squeezing near the tip usually breaks the walnut into pieces. Some cooks soak walnuts in boiling water for a few minutes before cracking them. The shell may soften slightly and lose some of its brittleness, which can help the kernel come out more intact.

Why Should Hazelnuts Be Cracked from the Side?

A hazelnut has a round, smooth shell. Squeezing it at the tip can send pressure directly to the kernel and crush it. Squeezing the middle of the side can split the shell while putting less pressure on the kernel. If you do not have a nutcracker, pressing two hazelnuts against each other in your palm can create similar sideways pressure. Applied at the right angle, this may work without an extra tool.

Is It Different for Pistachios and Almonds?

Most pistachios open slightly on their own when ripe and can be opened by hand or with light pressure. For pistachios that remain fully closed, place the nutcracker at the opening line and squeeze gently. Almond shells are usually not as hard as walnut shells, so moderate pressure is often enough. Too much force can break the kernel into small pieces instead of two halves.

Common Mistakes When Cracking Nuts

A common mistake is holding a nut in your hand and trying to crack it with your teeth or by hitting it against a hard surface. This is difficult to control and can cause shell fragments to mix with the kernel. A nutcracker or similar tool generally gives a safer, cleaner result. Another mistake is applying the same amount of force to every nut: the pressure needed for a walnut may be too much for a hazelnut and sometimes too little for an almond. Adjust the force to the thickness of each shell.

How to Separate Shell Pieces from Kernels

One practical method is to put the cracked mixture in a bowl of water. The kernels usually sink while the lighter shell pieces float. This works especially well for walnuts and hazelnuts broken into small pieces. For dry sorting, spread the mixture on a wide, flat tray and shake it gently. The heavier kernels collect on one side while the lighter shell fragments move toward the other. Thoroughly dry any kernels separated using water before using them. Wet nuts can mold more quickly and add extra moisture to cake or cookie dough.
