How to Fix Ayran If the Yogurt and Water Separate

If the yogurt and water separate and settle to the bottom while making ayran, the solution is to briefly blend the ayran again or whisk it; separation generally results from insufficient mixing and is easily resolved with a short whisk. Why does ayran separate? The protein and fat in yogurt form a balanced suspension when mixed with water; if this balance is not properly whisked, it can break down when left to stand for a long time and the yogurt may settle to the bottom again. Since ayran made with low-fat or light yogurt has a lower protein content, this separation occurs more quickly than with whole-milk yogurt. Adding cold water to ayran as soon as it comes out of the refrigerator can also sometimes speed up separation; the sudden temperature difference may weaken the bond between the proteins and water. Adding salt late is another factor; if salt is added early, it may slightly affect the yogurt's protein structure and make separation easier. How can separated ayran be brought back together? Whisking separated ayran in a blender for 30-40 seconds or stirring it quickly with a whisk in a deep bowl turns the yogurt and water back into a homogeneous mixture. If you do not have a blender, shaking it vigorously in a closed bottle for a few minutes can have a similar effect; make sure the bottle cap is tightly closed. If ayran separates every time, adding the salt last while mixing the yogurt and water and extending the mixing time a little provides a lasting solution. When yogurt is close to room temperature, it mixes with water more easily and consistently than cold yogurt straight from the refrigerator. How can separation be prevented when serving? If the prepared ayran is shaken briefly once more just before serving, any slight separation that may have formed before it is poured into a glass will also be resolved. Separation is almost inevitable in ayran prepared in a large container and left in the refrigerator for hours; for this reason, preparing it just before serving or briefly whisking it at serving time is the most practical habit. How do different types of yogurt affect separation? Ayran made with strained yogurt forms a more stable mixture with water thanks to its concentrated protein content and is slightly more resistant to separation than ayran made with regular yogurt. In homemade yogurt, the protein structure may vary slightly from one batch to another depending on fermentation time and the fat content of the milk used; this can cause the same recipe to separate more quickly sometimes. Preparing ayran with the whisk attachment of a food processor instead of whisking it by hand can also create a finer, more stable foam and extend the time before separation; ayran made in a processor generally stays homogeneous longer than hand-whisked ayran. Using sparkling mineral water instead of still water also makes ayran lighter and foamier and may extend the time before separation somewhat. Storing ayran in a pitcher with a plastic lid instead of a glass one also makes it easier to shake each time, preventing separation from going unnoticed. Adding the water gradually rather than all at once while making ayran can also help it blend more evenly with the yogurt.
