Latte is one of the most popular coffee drinks. Coffee itself is considered a good source of antioxidants, but many lattes sold at chain coffee shops become sugary desserts because of the added sugar and cream. Making a latte at home with your own ingredients is a more economical and balanced option. Below is a homemade pumpkin latte recipe and some points to keep in mind.

What do you need for a homemade pumpkin latte?

The ingredients are simple: one 200 ml measure of milk (or almond, coconut, or lactose-free milk, as preferred), six 15 ml measures of pumpkin puree, one 4 ml measure of vanilla syrup, one or two 15 ml measures of honey, 2–4 shots of espresso or a cup of strongly brewed coffee, and a pinch of cinnamon. Using honey instead of sugar is the main difference from prepared latte mixes. You can buy pumpkin puree or make it at home: roast cubed pumpkin in a 200°C / 390°F oven until soft, then blend it. Homemade puree contains less sweetener than canned puree.

How do you make a healthier latte?

Combine the milk, pumpkin puree, vanilla syrup, honey, and cinnamon in a small saucepan and warm gently. Do not boil it; heat it just until warm. Whisk or use a milk frother until the mixture is smooth. Add the coffee last and stir well. Before serving, garnish with cinnamon, grated dark chocolate, or orange zest, as desired.

What are other ways to reduce sugar and cream?

Most prepared latte syrups contain a lot of sugar. Using cinnamon, vanilla extract, or a small amount of honey instead can greatly reduce the sweetness. Using milk rather than heavy cream to make milk foam can also reduce the drink's calorie content. Almond or oat milk gives the drink a lighter texture, but these milks froth differently from cow's milk, so use lower heat when frothing.

What can you use instead of pumpkin?

When pumpkin is out of season, sweet potato puree or applesauce can provide a similar texture and mild sweetness. Add cocoa powder to make a mocha latte, or use pure vanilla syrup for a classic vanilla latte. Adding nutmeg or ground ginger along with cinnamon gives the drink a warm aroma, especially in winter.

How can you make latte foam at home?

You can make foamed milk at home without a special milk frother. Fill a lidded jar halfway with warmed milk and close the lid tightly. Shake the jar vigorously for about 30–45 seconds until the milk increases to twice its original volume and becomes foamy. If the shaken milk is heated in the microwave for about 30 seconds with the lid removed, the foam becomes more stable; use a microwave-safe glass jar and keep the metal lid out of the microwave. You can also make similar foam with a whisk or an electric mixer attachment. The milk should be warm; foam does not hold when the milk is boiling hot.

How should homemade latte syrup be stored?

Before the coffee is added, the pumpkin puree latte mixture can be stored in a covered container in the refrigerator for 3 to 4 days, so you do not have to prepare it again each time. Warm and stir the stored mixture gently before using it, since the spices may settle. For longer storage, pour the mixture into an ice-cube tray and freeze it. When needed, warm 1–2 cubes with milk. This is especially practical for making a batch during pumpkin season.
