Turkish curd cheese is made by adding a few drops of lemon juice or vinegar to boiling milk. What Kind of Milk Should You Use?

Keep the milk refrigerated until you start preparing it and follow a validated recipe’s heating instructions. Do not use yogurt that failed to set or shows signs of spoilage to make curd cheese; boiling does not guarantee safety.

How Do You Curdle the Milk?

Put the milk on the stove and bring it to a boil. A few minutes after it starts boiling, add the juice of half a lemon or 1 tablespoon of vinegar. The milk will soon separate and begin to form curds; as it continues to boil, the curds will stick together and grow larger.

When all the curds have risen to the surface, turn off the heat and pour the mixture through cheesecloth set over a strainer. The drained liquid is called whey; set it aside for use in other recipes instead of throwing it away.

How Do You Shape the Curd Cheese?

Rinse the drained curds in the cheesecloth with cold water to remove excess sourness. Then add salt and nigella seeds and mix. Tie the cheesecloth tightly, place a heavy object on top, and let it drain for 2–3 hours in the refrigerator.

Once well drained, the curd cheese can be seasoned with Turkish red pepper flakes, thyme, or ground red pepper, as desired. These seasonings add flavor and brighten its color. As it firms up, the cheese becomes easier to slice.

How Can You Use Whey?

When used instead of water in baked goods, whey separated from milk adds flavor and nutritional value to the dough; it is often used in bread and pide dough. It also adds a noticeable flavor when added to soups as a liaison.

Whey can be stored in the refrigerator for a few days or frozen if it will not be used right away, making it easy to use without waste. It is also known to be used as a natural nutrient source for watering plants.

How Should You Store Turkish Curd Cheese?

Store the finished curd cheese in a sealed container in the refrigerator and eat it within 1 week to keep it fresh. If stored longer, it will dry out and become more sour. Closing the container tightly helps preserve the cheese’s aroma and texture.

For longer storage, divide the curd cheese into small portions and freeze them. Its texture may change somewhat after thawing, but it can still be served at breakfast. Yogurt or milk that has curdled on its own can also be used in the same way to make curd cheese and avoid waste.
